RUSSIAN SANDWICHES

330 mL (1 1/3 cups) butter 3 egg whites, beaten stiffly 160 mL (2/3 cup) brown sugar 375 mL (1 1/2 cups) flour 160 mL (2/3 cup granulated sugar 250 mL (1 cup) oatmeal Cream butter; add sugars and mix some more. Add flour and oatmeal and lastly, the egg whites. Grease a 15x10 inch and a 11x9 inch cookie sheet with sides (or equivalent). Spread the dough in them (layers not thicker than 1/4 inch or (1 cm).Bake at 350°F (180°C) for approximately 15 to 20 minutes. Cut while hot, but let cool before removing from baking sheet. If desired, stick 2 pieces together with icing to make a real sandwich.
