HAVERMOUT PANNEKOEKEN.  (Oatmeal Pancakes)    —    Louis Van Den Bosch

3 cups flour 1/2 cup butter or table oil 2 cups oatmeal 4 eggs, separated 2 tbsp.sugar 2 tsp.vanilla 1/2 tsp.salt 1/4 cup whiskey or other liqour (optional) 2 tsp.baking powder 1 cup medium shreddded coconut (optional) 2 1/2 cups water 2 1/2 cups milk Mix dry ingredients. Add some of the fluid and beat. Add egg yokes. Beat egg whites until stiff. Add vanilla, melted butter, liquor and enough fluid to make not too thick a dough. Add egg whites. Fry pancakes in greased skillet until golden brown. These pancakes are not thick. Serve with syrup, brown sugar or jam.
