1 - Lb.pork liver
1/2 cup finely cut onions
2 - tblsp butter
1 1/2 lbs.lean pork
1 1/2 lbs.fresh lard
2 - eggs
salt - pepper
1/2 tsp.thyme - rubbed fine
1 - glove garlic (mashed)
- Saute´ onion and garlic in butter
- Grind meat and liver as fine as possible,
add rest of ingredients and mix real good.
- To make a more spreadable patty
add 30gr. of flour and 1/2 L. of aspic (water from boiling head etc.for headcheese)
- Put in baking pan and bake in oven at 350°F for 1-1 1/2 hrs. until done.
