GLUTEN FREE BREAD
In a small bowl combine: In a big mixing bowl combine:
1/2 cup of warm water 1/2 cup glutinous white rice flour
2 tsp.sugar 1 1/2 cup rice flour
4 tsp.dry yeast 1/3 cup tapioca flour
let sit for +/- 15 min. 1/4 cup sugar
In another bowl mix: 4 tsp.xantham gum
1 1/2 cup warm water 2/3 cup milk powder
4 tbsp.melted butter or oil 1 1/2 tsp.salt
1 tsp.vinegar
3 eggs
- Add yeast mixture to it and mix this with dry ingredients using
a strong
electric mixer (2 min.) a wisk or hands.
- Let rise in bowl covered with a cloth and plastic - in a warm
place for 45-60 min.
- Mix again for +/- 1 min.
- Spoon dough in 3 small (2 1/2 X 5 inch.) greased loaf pans.
(I use smaller ones yet because bread seems to dry out fast)
Let rise.
- Bake at 375°F until done and remove from baking pan.
NOTE:
All ingredients should be room temperture.
Save all the water from boiling potatoes. (freeze or refrigerate)
and use instead water.
