GLUTEN FREE PANCAKES
1/2 cup brown rice flour 1/2 tsp.salt
1 cup sweet rice flour 1/2 tsp.xanthan gum or gluten substitute
3 tblsp.tapioca flour 2 eggs separated
1/3 cup potato starch 3 tblsp.canola oil or butter or apple sauce or
4 tblsp.dry buttermilk powder (optional) coconut oil
1 tblsp.sugar 2 cups of water
1 1/2 tsp.baking powder 2 tblsp. vinegar
1/2 tsp.baking soda
Mix all dry ingredients.
Add water and vinegar - Mix
Add egg yolks and canola oil - Mix
Beat egg whites until stiff and add to previous mixture
Add more water if desired.
